Glutinous rice flour     150g
Granulated sugar         60g
Boiled Water                 270ml

Step of Mochi Ice Cream

1, Pour the 150ml milk, 150ml whipping cream, and 40g granulated sugar into the Ibywind YF700 Ice Cream Maker, then mix well.

2, Select the “Hard Ice Cream”, then the machine will automatically be working for about 2 hours.

3, When you hear the “beep” sound, it means the ice cream is ok.

4, Combine 150g glutinous rice flour and 20g sugar in a microwave-safe bowl and whisk all together. Then add boiled water in batches, in the meantime, mix them well until smooth and glutinous rice flour is completely dissolved.

5, Cover the bowl with plastic film. And then put it in the microwave and heat it on high heat for 3 minutes until the dough is no longer white and slightly translucent.

6, Once it’s cooled down enough for you to touch, roll out of the dough and you can sprinkle some cornstarch if the dough is very sticky. Roll dough out as thinly as possible and then cut circles into your dough.

7, Chill mochi in the fridge for about 30 minutes, and then you’re ready to form your mochi balls.

8, Pick up one piece of dough, wrap it around a ball of ice cream of your choice, in the meantime, you still can add some fruits in the mochi. Finally, pinch the four corners of the mochi.

9, When mochi gets sticky, put some cornstarch on the sticky area and seal the opening. Quickly cover with the plastic film and twist to close. Place each mochi ice cream into a mold to keep the shape. Put the mochi ice cream into the freezer for a few hours.
